I believe "by IP address" monitoring mode is better for your network, because students might always bring new laptops and other devices.
In "by MAC address" monitoring mode, every new computer will produce a new record in "User-computer table". So computer number in "user-computer table" will keep growing and exceeds your license limit.
But there will not have such a problem in "by ip address" monitoring mode because the ip address range is fixed.

"By MAC Address" monitoring mode is only suitable for small networks with fixed computers. And "by MAC address" can not work in a multiple-segments network, because routers will mask computers MAC addresses.
