Will it be possible to use a web proxy instead of a switch/router that would support port mirroring?

If it does, how do we achieve this configuration?

"Web proxy", "windows gateway" or "windows bridge" also can work.

Please check this topic for details: How to monitor internet usage without a manageable switch?

You also can use other third party proxy servers, like ISA, wingate... In that case, WFilter shall be installed in the proxy server, and the proxy server ip address shall be added into "System Settings"->"Monitoring Settings"->"Local Servers".
